Enjoy all the distinctive flavours of our terroir in a charming brasserie atmosphere

At the Brasserie Le Donjon, you will enjoy traditional yet inventive dishes based on seasonal produce.

In this eclectic "medieval-contemporary" decor, restaurant-director-chef Eric Bivent offers a wide choice of the culinary wealth of the terroirs in Aude, whether influenced by the Mediterranean or the flavours of the Southwest of France.

Open all-year round for lunch and dinner; closed on Sunday evening from November to March.

Chef Eric Bivent

Eric Bivent was trained by a well-known Carcassonne Chef, Jean-Claude Rodriguez, founder of the Académie du Cassoulet.
