The Head Wine Steward
Our Head Wine Steward, Georges Gracia, would be delighted to share his knowledge and enthusiasm for wines with you, and to advise you on pairings. The hotel's Wine Cellar can accommodate up to ten guest for a private wine-tasting or a candle-lit medieval dinner.
Born in the Carcassonne area, Georges is a graduate of Tain l'Hermitage, a prestigious oenology school.
After graduating, Georges spent a few years expanding his knowledge of wines from Burgundy, the Rhône Valley and Provence with Chef Alan Chapel. Later he spent some time honing his skills at Moët & Chandon Champagnes. Before arriving at Hôtel de La Cite Georges spent some time as sommelier at Michel Guérard's 3-star restaurant, Les Près d'Eugénie.
Today, Hôtel de la Cité owes the excellence of its wine cellar to Georges Gracia, who has added to some 10,000 bottles to the collection. Offering samples from vineyards from every French region.
An exceptional selection of 1,000 vintages was specially blended for the hotel by regional wine-makers, such as a Chardonnay of the Caves du Sieur d'Arques in Limoux, a Cuvée Réservée from the Château La Voulte Gasparets in the Corbières, or the Cuvée Nobilis from the Château Oupia from the Minervois vineyards.
