Limoux: AOC Blanquette de Limoux, AOC Crémant de Limoux, Limoux Blanc 

The Roman writer Livy appreciated the white wines of Limoux, which in those days were still wines.  In 1531, a Benedictine monk from the Abbey of St. Hilaire near Limoux, discovered the fermentation process which turned still wines into sparkling wines, thereby producing the sparkling wines that Limoux is so famous for.



Production Area: 25 km south of Carcassonne.

Climate: Influenced both by the Atlantic and the Mediterranean.

Grape Varieties: Crémant -  a minimum of 60% Mauzac, with Chardonnay and Chenin at 20% each.  The still wines are 100% Chardonnay, and the Blanquette between 90 – 100% Mauzac.

Wine Appreciation:  The sparkling wines have elegant bubbles, with a bouquet of peach or apple blossom.  The Limoux whites have a delicate note of vanilla and are fresh wines.
