Jérôme Ryon heads up the kitchens at the gastronomic restaurant La Barbacane and the Hôtel de la Cité, both flagship hotels in the South of France.
The Michelin-starred chef, winner of the Pierre Taittinger International Culinary Prize in 2005, offers an experienced cuisine combining precise gestures and exceptional regional produce. A native of Bourg en Bresse and an Occitan by adoption, he selects the best that nature has to offer. His menu is regularly updated according to the season, his visits to fish markets and his suppliers from sustainable agriculture. Jérôme works with his teams to combine rigour and respect for techniques with his own creativity. The result is balanced, harmonious dishes seasoned with a dash of daring.
